If you’re craving a comforting bowl of noodles, seafood udon is a perfect choice! We recently tried making this dish at home and it turned out amazing.


The combination of tender udon noodles, fresh seafood, and a savory broth is simply unbeatable. Here’s a simple recipe so you can enjoy this delicious meal too!


Ingredients:


Udon Noodles:


300g fresh or dried udon noodles


Seafood:


200g shrimp, peeled and deveined


150g squid, cleaned and sliced into rings


150g mussels, cleaned (optional)


Vegetables:


1 cup shiitake mushrooms, sliced


1 cup baby spinach or bok choy, chopped


1 carrot, julienned


1 small bell pepper, sliced


2 green onions, sliced (for garnish)


2 cloves garlic, minced


1 thumb-sized piece of ginger, minced


Broth:


4 cups dashi or chicken broth


2 tbsp soy sauce


1 tsp sesame oil


Salt and pepper to taste


Toppings (optional):


Sesame seeds


Nori (seaweed), cut into strips


Pickled ginger


Instructions:


1.Cook the Udon Noodles:


Bring a large pot of salted water to a boil. Add the udon noodles and cook according to the package instructions until tender. Drain and set aside.


2.Prepare the Seafood:


In a large skillet or wok, heat 1 tbsp of sesame oil over medium-high heat. Add the shrimp and cook for about 2-3 minutes, or until pink and cooked through. Remove from the skillet and set aside.


In the same skillet, add the squid and cook for 2 minutes until opaque. If using mussels, add them at this stage and cook until they open. Remove the seafood from the skillet and set aside with the shrimp.


3.Make the Broth:


In a large pot, heat 1 tbsp of sesame oil over medium heat. Add the minced garlic and ginger, cooking until fragrant, about 1 minute.


Pour in the dashi or chicken broth, and soy sauce. Bring to a simmer and cook for 5 minutes to let the flavors meld. Adjust seasoning with salt and pepper as needed.


4.Add Vegetables:


Add the sliced mushrooms, carrot, and bell pepper to the broth. Simmer for 3-4 minutes until the vegetables are tender. Add the spinach or bok choy and cook for an additional 1-2 minutes until wilted.


5.Combine Everything:


Return the cooked seafood to the pot with the broth and vegetables. Add the cooked udon noodles and stir to combine, ensuring everything is heated through.


6.Serve:


Ladle the seafood udon into bowls. Garnish with sliced green onions and optional toppings like sesame seeds, nori strips, and pickled ginger.
